Sri Lankan Mutton Biriyani Recipe

Biryani simply implies savoury rice cooked in meat. It is one of India`s signature dishes which is equally popular in Sri Lanka. It was introduced in the Island by Muslim invaders. The hint of saffron, ghee residues, and their special Biryani masala of nutmeg and star anise among other spices give it a rich flavor. In Sri Lanka, Biriyani is served with either mint sambol made of crushed mint and coconut, chili sambol made from ground chilies, Maldive fish, salt and lime.

INGREDIENTS

  • Mutton – 500 gm
  • Basmati rice – 4 cups
  • Ghee – ½  Cup
  • Butter – 2 tsp
  • Vinegar – 1 tbsp
  • Coconut – I large
  • Onion – 2
  • Cashews – 2 tbsp
  • Raisins – 2 tbsp
  • Boiled eggs – 4
  • Potato wafers – 1 cup
  • Coriander seeds – 2 tsp
  • Cumin seeds – 2 tsp
  • Green cardamom – 6
  • Cloves – 4
  • Black pepper – 2 tsp
  • Rampe leaves or bay leaves – 2
  • Spice Powders: Clove – 6, star anise – 2, nut meg – ½ tsp , cinnamon- 6,green cardamom- ½ tsp
  • Curry leaves – handful
  • Salt – to taste

 

HOW TO COOK SRI LANKAN BIRYANI

Step 1 – Marinate

Marinate mutton in vinegar, salt and spice powders. Roast the spices and seeds before powdering them.  Set aside.

Step 2- Extract coconut milk

Extract milk from grated coconut – One cup of thick milk and 2 cups of thin milk.

Step 3 – Cook Rice

Wash rice, add 2 cups of thin milk and 5 cups of water to it. Add salt. Cook rice till all the water is absorbed. Allow it to cool by spreading it.  Keep aside.

Step 4-   Cook Mutton  

Heat ghee is a pan, fry cashew nuts and raisins. Drain the excess fat and keep aside. To the ghee, add  curry leaves , cardamom, cloves, black pepper. Then add onions, fry till golden brown. Add the marinated mutton. Fry this for 5 minutes, and then add one cup of water and cook the mutton in a low flame till tender and dry.

Step 5   Mix Rice   

Add the cooked rice to the mutton. Pour thick coconut milk and sprinkle powdered spices. Add butter to it and stir gently.  Cover it till the coconut milk is absorbed. Add rampe leaves for flavor.

Step 6   Cook

Then cover it and seal the lid. Cook on low flame for 15 minutes till rice and mutton are blended well to release their flavors.

Step 7 – Serve  

Once finished let it rest for 10 minutes before serving. Garnish with fried cashew nuts, raisins, halved boiled eggs, potato wafers.
